As a cake decorator myself (albeit not of *that* caliber), I get that comment a lot.

Oddly, when I first started decorating, I had to make someone else cut the first piece. Now I have no trouble cutting into them myself. I think the point at which I made the transition was when I had enough faith in my own ability to believe that I could recreate it again if I wanted to.

Now when people say "How can you cut that, it's so pretty?" I answer "Well, if it doesn't get eaten it won't be pretty in a few weeks when the cake is moldy and the butter in the icing has gone rancid." Mind you, for a marzipan covered fruitcake the lifespan would actually be much longer than for a typical american sponge cake.
