Is black beans & corn a complete protein? If yes, is it still complete when you lightly pickle it (as in, for instance, a black bean & corn salsa)?

Date: 2003-08-06 05:54 am (UTC)So I'd say, if black beans and corn by itself is a complete protein, fresh black bean and corn salsa should still be a complete protien. Or cooked black bean and corn salsa, on the basis that cooked black beans and corn are a complete protein.
But I'm not a nutritionist, so I could be wrong.

Date: 2003-08-06 10:01 am (UTC)My preferred tomato-based salsas are acidic enough on their own, so don't need vinegar, unlike the more starch-heavy, acid-light corn-and-black-bean version.
