Is black beans & corn a complete protein? If yes, is it still complete when you lightly pickle it (as in, for instance, a black bean & corn salsa)?

I know black beans and rice have all the essential proteins a human body needs, and Erin tells me that black beans and corn do also. How pickling may affect either neither one of us can say.

Salsa isn't really a pickle-type food. Quite a few of the salsa recipes I know of just involve chopping up lots of fresh veggies and adding spices to them.

So I'd say, if black beans and corn by itself is a complete protein, fresh black bean and corn salsa should still be a complete protien. Or cooked black bean and corn salsa, on the basis that cooked black beans and corn are a complete protein.

But I'm not a nutritionist, so I could be wrong.

I stand corrected.

My preferred tomato-based salsas are acidic enough on their own, so don't need vinegar, unlike the more starch-heavy, acid-light corn-and-black-bean version.
